With fall sports and the school year in full swing, easy weeknight dinners are a must around here. I find myself pulling out the slow cooker more often than not! Last week, I made a really tasty Asian-inspired ramen dinner that came together super easily — and there was none left for leftovers (the true sign of the family seal of approval!)

Sesame Chicken Ramen Recipe
Please always keep in mind, I measure with my heart, and these are all approx. Add more/less to taste!
INGREDIENTS
- 3/4 cup soy sauce
- 3/4 cup brown sugar
- 1 tbsp minced garlic
- 1 tsp minced/ground ginger
- 1 tsp sesame oil
- 1 tbsp rice vinegar
- 1/4 cup honey
- 2 tbsp cornstarch
- 2-3 chicken breasts (I did 3 for 5+ servings)
- 1/2 onion, diced
- 1 head of broccoli, cut into small florets
- ramen noodles, cooked (I used 2 packets, and skipped the seasoning packet)
- sesame seeds + fresh basil for garnish
INSTRUCTIONS
- Add the soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, honey, and cornstarch into your slow cooker. Stir until well-combined.
- Add in the chicken and diced onion, and coat with the sauce.
- Cover and cook on HIGH for 2-3 hours, until the chicken is tender. (Could do LOW for 4-6 hrs)
- Shred the chicken, and return to the slow cooker.
- Add the broccoli, stir, and cook for about 30 minutes.
- Prepare your ramen noodles, drain, and add to the slow cooker.
- Stir, garnish with sesame seeds and freshly chopped basil. Serve and enjoy!

This Sesame Chicken would also be great served over rice! This got the thumbs up from my kids, and will definitely make it into my dinner rotation!
