As I mentioned in my Easter Recap post, I was super proud of my bunny cake. I had a lot of questions on Facebook and from people at the party about the Edible Easter Grass. It’s amazing and weird. We decided it tastes like Eucharist. You know, the stale bread you get at church. But green.
So I only had one box of cake mix, and cake-from-scratch was too much for me to mentally handle on Easter Eve. I wanted a layer cake (for height), so I used my small cake pan to make two mini layers out of the one box. Easter morning, I frosted the cake with vanilla icing. Once that set, I followed these steps from a pin I had been obsessing over since I bought the Edible Easter Grass on impulse.
Then I topped my pretty little cake with a bunny, and scattered some chocolate eggs. You know, to make it extra festive.
Now, the one con to this cake: once the grass had dried and hardened, it did make cutting the cake difficult. If I made it again, I would have cut the grass into .5-1″ pieces instead of 1-2″, I feel like that would help with cutting!
